Abstract

Licania kunthiana Hook. f. is a fruit belonging to the Cerrado biome, popularly known as bat fruit or "rapadura do cerrado". However, it is still little known and consumed. The aim of this study was to carry out the physico-chemical, biometric and mineral characterization of Licania kunthiana Hook. F. The fruit pulp was subjected to physicochemical analysis in triplicate for moisture, pH, titratable acidity, water activity (Aw), total soluble solids (ºBrix), vitamin C (mg/100g ascorbic acid) and phenolic compounds (mgEAG/100g) in alcoholic and hydroalcoholic extract (70°GL). Biometric characterization of fruit length (FC), fruit width (FW), whole fruit weight (WFW), seed weight (SW) and pulp weight (PP). And quantification of minerals: Nitrogen (N), Phosphorus (P), Potassium (K), Calcium (Ca), Magnesium (Mg), Sulphur (S), Boron (B), Copper (Cu), Iron (Fe), Manganese (Mn) and Zinc (Zn). The fruit had good physicochemical, biometric and mineral properties.
